Ingredients

  • 1 1/2 cups chilled ginger beer or ale
  • 3/4 cup cream soda (chilled)
  • 1 tablespoon butter
  • 2 tablespoons dark brown sugar
  • 2 tablespoons white granulated sugar
  • 1 tablespoon corn syrup
  • 1 teaspoon molasses
  • 1 (13.5 oz) can evaporated milk
  • 1 teaspoon sea salt
  • 1 tablespoon vanilla extract
  • 1 tablespoon white wine vinegar
  • 1 cup heavy cream
  • 1/4 cup powdered sugar (icing sugar)

Instructions

  1. In a heavy saucepan, melt the butter and sugars together over gentle heat until dissolved.
  2. Add the remaining ingredients (except evaporated milk) and continue heating, stirring frequently.
  3. Once mixed, add the evaporated milk and simmer for two minutes without boiling.
  4. Allow the butterscotch syrup to cool and maintain a runny consistency.
  5. In a bowl, combine heavy cream, powdered sugar, and a tablespoon of prepared butterscotch syrup. Whisk until thickened.
  6. In a serving jug, pour chilled ginger beer, then add half of the butterscotch syrup and stir to dissolve.
  7. Pour in the chilled cream soda and mix well.
  8. Taste and add more butterscotch syrup if desired.
  9. Pour the butterbeer into glasses and top with a spoonful of the creamy head mixture.
