Ingredients

  • 1 tbsp (0.5 oz) butter
  • 1 tbsp soft brown sugar
  • 1 star anise whole
  • 1 cinnamon stick
  • 3 whole cloves
  • 2 cardamom pods
  • 3 Organic Black Peppercorns
  • 1.50 fl oz rum
  • boiling water
  • Ground Cinnamon for garnish

Instructions

  1. Coarsely crush the spices and put them with the butter and brown sugar in a small saucepan.
  2. Melt over low heat, mixing well until the sugar has dissolved.
  3. Leave to infuse for 2 minutes, and then filter through a sieve into a clean container.
  4. Once the mixture is cool, store it in the fridge.
  5. In a mug, place 1 teaspoon of cold spiced butter, 1.5 fl oz of rum, and then top with boiling water.
  6. Serve topped with a sprinkle of Ground Cinnamon.
