Ingredients

  • 1 oz Pear Brandy
  • 1 oz rosemary simple syrup
  • 1 oz lemon juice
  • 1.50 oz dry gin
  • Sugar-Salt (for rim)
  • 1/2 cup sugar
  • 1/2 cup water
  • 3-4 sprigs rosemary (each 4-5 inches long)
  • 1/2 teaspoon cane sugar
  • 1/4 teaspoon kosher salt

Instructions

  1. Prepare the rosemary simple syrup by boiling 1/2 cup of sugar and 1/2 cup of water in a saucepan, then adding and simmering 3-4 sprigs of rosemary for 2-3 minutes. Once done, remove from heat, discard the rosemary, and let the syrup cool completely.
  2. Sprinkle 1/2 teaspoon of cane sugar and 1/4 teaspoon of kosher salt on a small plate to create the rim mixture. Then, rim the glasses by twirling the cut face of a lemon on the rim and coating it with the mixture.
  3. Fill a shaker 2/3 full with ice, rinse it quickly to remove any freezer burn.
  4. Add 1 oz Pear Brandy, 1 oz rosemary simple syrup, 1 oz lemon juice, and 1.5 oz dry gin to the shaker, and shake vigorously for about 12 seconds until well-chilled.
  5. Strain the cocktail into glasses and garnish each with a tip of rosemary.
