Ingredients

  • 2 ounces Irish whiskey
  • 1 teaspoon ground espresso
  • 2 teaspoons demerara sugar
  • 3 ounces cold brew coffee
  • Whipped cream (for serving)

Instructions

  1. Combine Irish whiskey and ground espresso in a small bowl; let it stand for 15 minutes.
  2. Strain the whiskey and espresso mixture through a coffee filter into a cocktail shaker.
  3. In a separate small bowl, stir the demerara sugar and 2 teaspoons of hot water until the sugar is dissolved.
  4. Add the demerara syrup and cold brew coffee to the cocktail shaker, then fill it with ice.
  5. Shake the mixture until the outside of the shaker is frosty, about 30 seconds.
  6. Strain the cocktail into a Collins glass filled with ice and top it with whipped cream.
