Whipped Citrus Fizz

Ingredients
- 1 cup sugar
- 1 cup water
- Ice
- 1.50 ounces gin
- 0.50 ounces fresh lemon juice
- 0.50 ounces fresh lime juice
- 1 large egg white
- 1 ounce heavy cream
- 3 drops orange flower water
- 1-2 drops vanilla extract (optional)
- 1-2 ounces chilled club soda or plain seltzer
Instructions
- Prepare the simple syrup by combining sugar and water in a saucepan, bringing it to a boil, and then allowing it to cool.
- Chill a Collins glass and fill a shaker with ice.
- Add gin, lemon and lime juices, egg white, 1 ounce of the simple syrup, cream, orange flower water, and vanilla extract (if using) to the shaker. Seal and shake vigorously for 30 seconds.
- Strain the mixture into the Collins glass.
- Pour the drink back into the shaker, seal, and shake vigorously for 30 to 45 seconds.
- Pour the mixture back into the Collins glass, insert a straw, and then add the club soda or seltzer, pouring it along the straw to preserve the foam.
