Ingredients

  • 1 cup sugar
  • 1 cup water
  • Ice
  • 1.50 ounces gin
  • 0.50 ounces fresh lemon juice
  • 0.50 ounces fresh lime juice
  • 1 large egg white
  • 1 ounce heavy cream
  • 3 drops orange flower water
  • 1-2 drops vanilla extract (optional)
  • 1-2 ounces chilled club soda or plain seltzer

Instructions

  1. Prepare the simple syrup by combining sugar and water in a saucepan, bringing it to a boil, and then allowing it to cool.
  2. Chill a Collins glass and fill a shaker with ice.
  3. Add gin, lemon and lime juices, egg white, 1 ounce of the simple syrup, cream, orange flower water, and vanilla extract (if using) to the shaker. Seal and shake vigorously for 30 seconds.
  4. Strain the mixture into the Collins glass.
  5. Pour the drink back into the shaker, seal, and shake vigorously for 30 to 45 seconds.
  6. Pour the mixture back into the Collins glass, insert a straw, and then add the club soda or seltzer, pouring it along the straw to preserve the foam.
