Ingredients

  • 3 oz Cava
  • 1.50 oz Vodka
  • 2 tbsp Lemon Sorbet
  • 2 tbsp Apple Juice
  • 1/8 tsp Special Ingredients Lecithin Powder

Instructions

  1. Prepare the glass by placing it in the freezer for at least 30 minutes before serving.
  2. In a bowl, mix the apple juice and lecithin powder using a hand blender until a layer of foam forms.
  3. In a separate mixing bowl, blend the Cava, vodka, and lemon sorbet together using a hand blender.
  4. If necessary, use a long spoon to layer the Sgroppino in the glass, leaving about 1cm space from the top.
  5. Gently spoon the apple juice foam onto the Sgroppino, forming a nice high point of foam or garnish with a mint leaf.
