Ingredients

  • 8 cups diced watermelon
  • 1/2 cup lime juice
  • 1/2 cup triple sec
  • 1 1/2 cups white tequila
  • 3 sliced jalapenos (divided, optional)
  • 1/3 cup granulated sugar
  • 1/3 cup water
  • Salt and sugar for rim
  • Mint, lime, jalapeno for garnish

Instructions

  1. Place the watermelon, lime juice, triple sec, and tequila in a blender. Blend until liquefied.
  2. Strain the mixture twice through a fine mesh strainer.
  3. Pour the watermelon juice and half of the sliced jalapenos into a large pitcher. Refrigerate.
  4. In a small saucepan, heat the sugar, water, and remaining jalapeno. Cook for 2-3 minutes, then set aside to cool. Strain the jalapeno.
  5. Add the simple syrup to the watermelon juice and chill.
  6. Optional: Remove the jalapenos from the margarita after 1-2 hours, or leave them in for added heat.
  7. Wet the rims of the glasses, then dip in salt and sugar.
  8. Add ice to the glasses, pour the watermelon margarita, and garnish with lime, mint, and sliced jalapeno.
