Ingredients

  • 1 pitted Medjool date
  • 2 tbsp raw cashews
  • 3/4 cup water, plus more for soaking
  • 2 oz canned full-fat coconut milk
  • 1 tbsp pure maple syrup
  • 1/2 oz bourbon or rum (optional)
  • 1 tsp pure vanilla extract
  • 1/4 tsp ground cinnamon
  • A pinch of grated fresh nutmeg
  • A pinch of kosher salt
  • Dairy-free whipped topping, for serving

Instructions

  1. Soak the date and cashews in at least 2" water in a resealable container for at least 4 hours or up to 12 hours.
  2. Drain and rinse the soaked dates and cashews. Transfer them to a high-powered blender.
  3. Add coconut milk, maple syrup, bourbon (if using), vanilla, cinnamon, nutmeg, salt, and 3/4 cup water to the blender. Blend until smooth and creamy.
  4. Transfer the eggnog to a resealable jar or airtight container. Refrigerate until thickened and cold for at least 2 hours and up to 3 days.
  5. Serve cold, shake before serving if mixture has separated, and top with dairy-free whipping cream.
