Ingredients
- 1/3 can (4.5 ounces) good quality full-fat coconut milk, chilled
- 2/3 cup good quality almond milk or other non-dairy milk of choice
- 2 tablespoons raw cashews, soaked for at least 30 minutes or up to overnight, drained
- 2-3 Medjool dates, pitted and roughly chopped
- 2 teaspoons pure vanilla extract
- 2 teaspoons rum extract
- 1/8 teaspoon grated fresh nutmeg
- Pinch of ground cinnamon
- Pinch of kosher salt
- 1-2 tablespoons brandy, rum, or bourbon (optional)
Instructions
- Gently open the chilled can of coconut milk, scoop the solid coconut cream into a high-powered blender, and discard the remaining liquid.
- Add almond milk, soaked and drained cashews, dates, vanilla, rum extract, nutmeg, cinnamon, and salt to the blender.
- Blend on high speed until completely smooth, which may take 3-5 minutes.
- Strain the eggnog through a fine-mesh sieve if desired.
- Serve immediately as is, or add some brandy, rum, or bourbon to taste.
- The eggnog can be stored in an airtight container in the refrigerator for up to 1 week. Enjoy slightly warm to soften any hardened bits of coconut cream.
