Ingredients

  • 1/3 can (4.5 ounces) good quality full-fat coconut milk, chilled
  • 2/3 cup good quality almond milk or other non-dairy milk of choice
  • 2 tablespoons raw cashews, soaked for at least 30 minutes or up to overnight, drained
  • 2-3 Medjool dates, pitted and roughly chopped
  • 2 teaspoons pure vanilla extract
  • 2 teaspoons rum extract
  • 1/8 teaspoon grated fresh nutmeg
  • Pinch of ground cinnamon
  • Pinch of kosher salt
  • 1-2 tablespoons brandy, rum, or bourbon (optional)

Instructions

  1. Gently open the chilled can of coconut milk, scoop the solid coconut cream into a high-powered blender, and discard the remaining liquid.
  2. Add almond milk, soaked and drained cashews, dates, vanilla, rum extract, nutmeg, cinnamon, and salt to the blender.
  3. Blend on high speed until completely smooth, which may take 3-5 minutes.
  4. Strain the eggnog through a fine-mesh sieve if desired.
  5. Serve immediately as is, or add some brandy, rum, or bourbon to taste.
  6. The eggnog can be stored in an airtight container in the refrigerator for up to 1 week. Enjoy slightly warm to soften any hardened bits of coconut cream.
