Vegan Coconut Whiskey Bliss
A creamy and scrumptious vegan take on the classic Irish cream liqueur, featuring the delightful combination of coconut milk, whiskey, and a hint of coffee.
Ingredients
- 2.50 oz Scotch whisky or Irish whiskey
- 2 tbsp strong fresh coffee, cooled OR 1 heaped tsp instant coffee (dissolved in small amount of boiling water and left to cool)
- 1 tsp vanilla extract
- 1 (13.5 oz) can coconut milk
- 4-6 tbsp agave syrup or more to taste
Instructions
- Combine the whisky, cooled coffee, vanilla extract, coconut milk, and agave syrup in a blender.
- Blend the mixture for 2 minutes or until it becomes completely smooth.
- Taste the concoction and adjust the sweetness, whisky strength, or coffee intensity to your preference.
- Blend the mixture again until it reaches your desired consistency.
- If storing in the fridge, make sure to re-soften it in the microwave or in a pan of hot water and whisk it up before serving.
