A delightful frozen cocktail combining the flavors of daiquiri and piña colada with bitters-infused strawberries and crushed pineapple.
Ingredients
- 3/4 cup halved fresh strawberries
- 1/2 tbsp Regans' Orange Bitters
- 1/2 cup drained canned crushed pineapple
- 1/4 cup well-shaken and stirred cream of coconut
- 1/2 oz Don Q Piña rum
- 1 dash Angostura bitters
- 1/2 oz Don Q Añejo rum
- 1.50 tbsp turbinado sugar
- 1 fresh strawberry, hulled
- 1 pineapple leaf
Instructions
- Mix strawberries and bitters in a bowl and let stand until strawberries absorb the bitters flavor.
- Drain the soaked strawberries and freeze them in a plastic bag for at least 4 hours.
- Freeze the crushed pineapple in a separate bag for at least 4 hours.
- Break the frozen pineapple into small pieces and blend it with the cream of coconut, rum, and bitters until smooth. Freeze the piña colada mixture.
- Blend the rum, sugar, and frozen strawberries until smooth to make the strawberry daiquiri.
- Pour the piña colada into a glass, top it with the strawberry daiquiri, and stir to create a swirl effect.
- Garnish the cocktail with a hulled strawberry speared with a pineapple leaf.
