Ingredients

  • 2 ounces passion fruit purée (fresh or thawed from frozen)
  • 1 lime, cut into wedges
  • 1 ounce simple syrup
  • 8-10 fresh mint leaves
  • 2 ounces white rum
  • Ice
  • Splash of chilled club soda
  • Fresh mint sprig for garnish (optional)

Instructions

  1. Add the passion fruit purée and lime wedges cut-side up on top in a highball glass.
  2. Pour simple syrup over the fruit and muddle until the lime wedges break down.
  3. Place the mint leaves on top and lightly muddle.
  4. Pour in white rum and add a handful of ice. Use the bar spoon to stir the mixture and chill.
  5. Top with the chilled club soda and gently stir again to combine.
  6. Place the mint sprig in the palm of your hand, clap your other hand on top to release the mint's fragrance, and add the sprig to the glass. Enjoy!
