Tropical Mint Frozé
A refreshing and tropical cocktail made with rosé wine, pineapple, and mint, blended to a slushy consistency with a hint of lemon.
Ingredients
- 6 oz rosé wine
- 1.50 tbsp sugar
- 1.50 tbsp water
- 2.50 oz frozen pineapple chunks
- 5 fresh mint leaves, divided
- 1.25 oz fresh lemon juice
- 1 cup ice cubes
Instructions
- Pour the rosé wine into a freezer-safe container and freeze it overnight or for at least 6 hours until it's thickened but not frozen solid.
- In a saucepan, combine sugar and water, then add pineapple chunks and bring to a boil. Let it sit for 10 minutes, then stir in 4 mint leaves and let it sit for another 20 minutes. Strain the syrup and chill in the fridge for 30 minutes.
- In a blender, combine lemon juice, pineapple mint syrup, frozen rosé, 1 mint leaf, and ice cubes. Blend until smooth.
- Transfer the blender jar to the freezer and freeze the mixture until thickened, about 25-35 minutes.
- Blend the mixture again until smooth, then pour into a serving glass and enjoy immediately.
