Ingredients

  • 6 oz rosé wine
  • 1.50 tbsp sugar
  • 1.50 tbsp water
  • 2.50 oz frozen pineapple chunks
  • 5 fresh mint leaves, divided
  • 1.25 oz fresh lemon juice
  • 1 cup ice cubes

Instructions

  1. Pour the rosé wine into a freezer-safe container and freeze it overnight or for at least 6 hours until it's thickened but not frozen solid.
  2. In a saucepan, combine sugar and water, then add pineapple chunks and bring to a boil. Let it sit for 10 minutes, then stir in 4 mint leaves and let it sit for another 20 minutes. Strain the syrup and chill in the fridge for 30 minutes.
  3. In a blender, combine lemon juice, pineapple mint syrup, frozen rosé, 1 mint leaf, and ice cubes. Blend until smooth.
  4. Transfer the blender jar to the freezer and freeze the mixture until thickened, about 25-35 minutes.
  5. Blend the mixture again until smooth, then pour into a serving glass and enjoy immediately.
