Ingredients
- 3 oz evaporated milk
- 1.40 oz sweetened condensed milk
- 1.40 oz coconut milk
- 1.50 oz sweetened cream of coconut
- 3 cinnamon sticks
- 1/2 vanilla bean (split lengthwise)
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 2 tsp vanilla extract
- 2.50 oz rum (white, spiced, coconut, or a combination)
- Toasted coconut (for garnish (optional))
Instructions
- In a large saucepan over low heat, combine evaporated milk, condensed milk, coconut cream, and coconut milk, whisking to blend.
- Add cinnamon sticks, split vanilla bean, ground cinnamon, and nutmeg. Let the mixture barely simmer for 20-30 minutes, stirring occasionally until slightly thickened.
- Remove from heat and cool for at least 30 minutes or until it reaches room temperature. Discard the cinnamon sticks and vanilla bean.
- Slowly whisk in vanilla extract and rum. Pour the mixture into a pitcher, cover, and chill in the refrigerator for at least 2 hours, or until cold.
- Serve in small glasses or larger ones with ice cubes. Garnish with a sprinkle of cinnamon, nutmeg, and toasted coconut.
