Ingredients

  • 3 oz evaporated milk
  • 1.40 oz sweetened condensed milk
  • 1.40 oz coconut milk
  • 1.50 oz sweetened cream of coconut
  • 3 cinnamon sticks
  • 1/2 vanilla bean (split lengthwise)
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 2 tsp vanilla extract
  • 2.50 oz rum (white, spiced, coconut, or a combination)
  • Toasted coconut (for garnish (optional))

Instructions

  1. In a large saucepan over low heat, combine evaporated milk, condensed milk, coconut cream, and coconut milk, whisking to blend.
  2. Add cinnamon sticks, split vanilla bean, ground cinnamon, and nutmeg. Let the mixture barely simmer for 20-30 minutes, stirring occasionally until slightly thickened.
  3. Remove from heat and cool for at least 30 minutes or until it reaches room temperature. Discard the cinnamon sticks and vanilla bean.
  4. Slowly whisk in vanilla extract and rum. Pour the mixture into a pitcher, cover, and chill in the refrigerator for at least 2 hours, or until cold.
  5. Serve in small glasses or larger ones with ice cubes. Garnish with a sprinkle of cinnamon, nutmeg, and toasted coconut.
