Ingredients
- 1 oz grilled pineapple, cored and sliced
- Juice of 1 lemon
- 2 cups water
- 1 tbsp honey
- 0.50 oz Coconut Rum
- Ice
Instructions
- Preheat a BBQ or grill pan to medium-high heat. Grill the pineapple slices for about 5 minutes on each side, or until desired cook. Set aside to cool.
- In a large pitcher, whisk 2 cups of water with honey until well combined.
- In a blender, blend the lemon juice and grilled pineapple until smooth.
- Pour the mixture through a mesh strainer into the pitcher, discarding any leftover pulp.
- Add the coconut rum to the pitcher and whisk until well combined.
- Serve the cocktail over ice.
- Optionally, garnish with a grilled pineapple chunk and a cleaned pineapple leaf.
