Ingredients
- 1 cup frozen pineapple chunks
- 1/2 cup light coconut cream, chilled
- 3 tbsp tequila
- 1 tbsp triple sec or liqueur
- Zest and juice of 1 lime
- 2 tsp sugar
- Shaved fresh coconut or flaked coconut, for garnish
- Dried pineapple flowers, for garnish
Instructions
- Preheat the oven to 100°F. Line a baking tray with parchment paper.
- Pat dry the pineapple slices and place them on the lined tray. Sprinkle with sugar and bake for 1-2 hours until dried.
- In a blender, combine the frozen pineapple, coconut cream, tequila, triple sec, lime juice, and sugar. Blend until smooth.
- Pour the mixture into a serving glass.
- Garnish with lime zest, shaved coconut, and dried pineapple flowers.
