Ingredients

  • 1 cup frozen pineapple chunks
  • 1/2 cup light coconut cream, chilled
  • 3 tbsp tequila
  • 1 tbsp triple sec or liqueur
  • Zest and juice of 1 lime
  • 2 tsp sugar
  • Shaved fresh coconut or flaked coconut, for garnish
  • Dried pineapple flowers, for garnish

Instructions

  1. Preheat the oven to 100°F. Line a baking tray with parchment paper.
  2. Pat dry the pineapple slices and place them on the lined tray. Sprinkle with sugar and bake for 1-2 hours until dried.
  3. In a blender, combine the frozen pineapple, coconut cream, tequila, triple sec, lime juice, and sugar. Blend until smooth.
  4. Pour the mixture into a serving glass.
  5. Garnish with lime zest, shaved coconut, and dried pineapple flowers.
