Ingredients

  • 6 mint leaves
  • Petals of 3 unsprayed roses, plus 6 small unsprayed roses to garnish
  • 3 oz gin
  • 1/4 cup lemon juice
  • Ice cubes
  • 6 oz sparkling white wine, chilled
  • Rose syrup:
  • 3/4 cup granulated sugar
  • 1 Tbsp rosewater

Instructions

  1. Chill a tall glass in the fridge.
  2. Make the rose syrup by dissolving sugar in water over medium-high heat. Stir in rosewater and chill until cooled.
  3. Gently bruise the mint leaves and rose petals and place them in the chilled glass.
  4. In two batches, combine gin, lemon juice, rose syrup, and plenty of ice in a cocktail shaker. Shake well.
  5. Pour the mixture into the glass and top up with sparkling wine.
  6. Garnish with a small unsprayed rose, then serve immediately with a straw.
