Ingredients
- 1/2 cup sugar
- 1 cup water
- 1 big handful of rosemary sprigs
- 1 tbsp chopped rosemary
- 1 tbsp coarse salt
- 2 tbsp sugar
- 1/2 tbsp lemon zest
- 1 oz fresh Meyer lemon juice
- 2 oz tequila
- 2 oz water
- 1/2 oz rosemary simple syrup
Instructions
- In a medium pot, combine sugar, water, rosemary sprigs, and chopped rosemary. Simmer until the liquid reduces in half to form a thick and sweet simple syrup.
- In a food processor, blend together coarse salt, sugar, and lemon zest to create the rim garnish. If the mixture is moist, spread it out on a dish to dry or use a dehydrator.
- Run a lemon wedge around the rim of a glass and dip it in the rim garnish.
- In a martini shaker, combine fresh lemon juice, tequila, water, and rosemary simple syrup. Shake well and pour into the prepared glass.
