Ingredients
- 8 organic unwaxed lemons
- 33.80 oz vodka
- 2 cups sugar
- 33.80 oz water
Instructions
- Use a sharp peeler or small knife to carefully peel the zest from the lemons.
- Remove any white pith from the lemon peel to avoid bitterness.
- Place the lemon peels in a large clean jar and pour the vodka over them, ensuring the peels are completely submerged. Seal the jar and let it steep in a cool, dark place for 10-14 days.
- Strain the infused vodka through a muslin cloth, discarding the lemon peel. The liquid should have turned a bright yellow.
- Create a sugar syrup by boiling 2 cups of water with the sugar until the sugar has dissolved.
- Remove the sugar syrup from the heat and stir in the remaining 2 cups of cold water to cool the mixture down.
- Once the sugar syrup is completely cooled, add it to the yellow vodka.
- Transfer the limoncello to sterilized bottles and store it in the fridge. The liqueur should last for up to a year, but discard if mold appears or if it tastes off.
