Ingredients

  • 8 organic unwaxed lemons
  • 33.80 oz vodka
  • 2 cups sugar
  • 33.80 oz water

Instructions

  1. Use a sharp peeler or small knife to carefully peel the zest from the lemons.
  2. Remove any white pith from the lemon peel to avoid bitterness.
  3. Place the lemon peels in a large clean jar and pour the vodka over them, ensuring the peels are completely submerged. Seal the jar and let it steep in a cool, dark place for 10-14 days.
  4. Strain the infused vodka through a muslin cloth, discarding the lemon peel. The liquid should have turned a bright yellow.
  5. Create a sugar syrup by boiling 2 cups of water with the sugar until the sugar has dissolved.
  6. Remove the sugar syrup from the heat and stir in the remaining 2 cups of cold water to cool the mixture down.
  7. Once the sugar syrup is completely cooled, add it to the yellow vodka.
  8. Transfer the limoncello to sterilized bottles and store it in the fridge. The liqueur should last for up to a year, but discard if mold appears or if it tastes off.
