Ingredients
- 1 medium raw mango
- 2 tablespoons sugar (adjust to taste)
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon saffron
- A pinch of black salt or rock salt (optional)
- Mint sprigs (optional)
- 1 cup cold water
- Ice cubes
Instructions
- Peel the raw mango and remove the pulp.
- Place the pulp in a pot and add sugar, saffron, cardamom, and salt. Cook on low heat for 15 minutes, stirring occasionally until it forms a jam-like consistency.
- Allow the concentrate to cool, then store it in a dry glass jar and refrigerate for up to a month.
- To serve, mix 3 to 4 tablespoons of concentrate with 1 cup of cold water, ice cubes, and a pinch of rock salt in a shaker or using an immersion blender for a smooth consistency.
- Add ice cubes and garnish with mint sprigs, if desired.
