Ingredients

  • 1 medium raw mango
  • 2 tablespoons sugar (adjust to taste)
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon saffron
  • A pinch of black salt or rock salt (optional)
  • Mint sprigs (optional)
  • 1 cup cold water
  • Ice cubes

Instructions

  1. Peel the raw mango and remove the pulp.
  2. Place the pulp in a pot and add sugar, saffron, cardamom, and salt. Cook on low heat for 15 minutes, stirring occasionally until it forms a jam-like consistency.
  3. Allow the concentrate to cool, then store it in a dry glass jar and refrigerate for up to a month.
  4. To serve, mix 3 to 4 tablespoons of concentrate with 1 cup of cold water, ice cubes, and a pinch of rock salt in a shaker or using an immersion blender for a smooth consistency.
  5. Add ice cubes and garnish with mint sprigs, if desired.
