Ingredients
- 2 cups cubed seedless watermelon
- 1 1/2 oz vodka
- 1 tbsp lime juice
- 1-2 tsp simple syrup
- Fresh mint leaves
- Sparkling water (optional)
Instructions
- In a blender, puree cubed watermelon until smooth. Crush some of the watermelon with your hands if needed to increase the liquid content.
- In a cocktail shaker, muddle 8-10 mint leaves. Add the watermelon juice, vodka, lime juice, simple syrup, and ice. Shake well to combine.
- Strain the mixture into a rocks glass filled with ice.
- Optionally, top with sparkling water.
- Garnish with watermelon cubes or balls, a slice of lime, and a sprig of fresh mint. Serve immediately.
