Ingredients

  • 1 lime
  • 1 handful of mint leaves
  • 1/2 cup rhubarb, chopped
  • 1/4 cup strawberries, chopped
  • 2 tablespoons sugar
  • 2 ounces tequila
  • 2-3 dashes orange bitters
  • Salt, for rimming the glass
  • Ice cubes made with lime juice and zest

Instructions

  1. Combine 1 cup of water with juice from 1 lime (about 3 tablespoons) and lime zest, then pour into an ice cube tray. Add a few mint leaves to each cube and freeze.
  2. In a saucepan, mix 1 cup of water, sugar, strawberries, rhubarb, and a pinch of salt. Simmer for about 10 minutes until the rhubarb breaks down, stirring occasionally. Strain and allow to cool. Measure out 1 1/2 cups of the syrup (if it's less, add a bit of water).
  3. For each margarita, stir together 3 ounces of the strawberry rhubarb syrup, 2 ounces of tequila, 1 ounce of lime juice, and a few dashes of orange bitters.
  4. Serve the margarita in a salt-rimmed glass over the lime-infused ice cubes.
