Ingredients
- 2 large egg yolks
- 2 tbsp sugar
- 1 cup whole milk
- Pinch of coarse salt
- 4 oz stout beer
- 1/2 cup heavy cream
- 2 tbsp dark rum
- Freshly whipped cream, for serving
- Chocolate shavings, for serving
Instructions
- In a medium heatproof bowl, whisk together egg yolks and 2 tbsp sugar until the mixture becomes pale yellow and thick.
- In a medium saucepan, bring the milk and salt to a gentle simmer. Slowly pour the hot milk mixture into the bowl with the egg yolks, whisking constantly.
- Pour the yolk and milk mixture back into the saucepan and cook over medium heat, stirring constantly until the mixture thickens enough to coat the back of a spoon.
- Strain the mixture through a fine-mesh sieve into a large bowl and let it cool, then add the stout beer, heavy cream, and rum. Cover and refrigerate overnight.
- In a heatproof mixer bowl set over a pan of simmering water, whisk together egg whites and the remaining sugar until the sugar is dissolved and the mixture is warm.
- Remove from heat and beat the mixture until stiff peaks form. Fold the meringue into the chilled eggnog.
- Pour into glasses and top with a dollop of whipped cream and chocolate shavings.
