Ingredients

  • 2 large egg yolks
  • 2 tbsp sugar
  • 1 cup whole milk
  • Pinch of coarse salt
  • 4 oz stout beer
  • 1/2 cup heavy cream
  • 2 tbsp dark rum
  • Freshly whipped cream, for serving
  • Chocolate shavings, for serving

Instructions

  1. In a medium heatproof bowl, whisk together egg yolks and 2 tbsp sugar until the mixture becomes pale yellow and thick.
  2. In a medium saucepan, bring the milk and salt to a gentle simmer. Slowly pour the hot milk mixture into the bowl with the egg yolks, whisking constantly.
  3. Pour the yolk and milk mixture back into the saucepan and cook over medium heat, stirring constantly until the mixture thickens enough to coat the back of a spoon.
  4. Strain the mixture through a fine-mesh sieve into a large bowl and let it cool, then add the stout beer, heavy cream, and rum. Cover and refrigerate overnight.
  5. In a heatproof mixer bowl set over a pan of simmering water, whisk together egg whites and the remaining sugar until the sugar is dissolved and the mixture is warm.
  6. Remove from heat and beat the mixture until stiff peaks form. Fold the meringue into the chilled eggnog.
  7. Pour into glasses and top with a dollop of whipped cream and chocolate shavings.
