Ingredients
- 2 large egg yolks
- 2 tbsp sugar
- 3/4 cup whole milk
- Pinch of coarse salt
- 6 oz stout beer
- 1/4 cup heavy cream
- 2 tbsp dark rum
- Freshly whipped cream, for serving
- Chocolate shavings, for serving
Instructions
- In a medium heatproof bowl, whisk together egg yolks and sugar until pale and thick.
- In a medium saucepan, heat the milk and salt until it reaches a bare simmer.
- Slowly pour the hot milk mixture into the bowl with the egg yolks, whisking constantly.
- Transfer the mixture back to the saucepan and cook over medium heat, stirring constantly, until it thickens to coat the back of a spoon.
- Pour the mixture through a fine-mesh sieve into a large bowl and let it cool, stirring occasionally.
- Add the beer, cream, and rum to the mixture, cover, and refrigerate overnight.
- In a heatproof mixer bowl, whisk sugar and egg whites over simmering water until smooth and warm.
- Remove from heat and beat with a mixer until stiff peaks form.
- Fold the egg white mixture into the eggnog.
