Ingredients

  • 2 large egg yolks
  • 2 tbsp sugar
  • 3/4 cup whole milk
  • Pinch of coarse salt
  • 6 oz stout beer
  • 1/4 cup heavy cream
  • 2 tbsp dark rum
  • Freshly whipped cream, for serving
  • Chocolate shavings, for serving

Instructions

  1. In a medium heatproof bowl, whisk together egg yolks and sugar until pale and thick.
  2. In a medium saucepan, heat the milk and salt until it reaches a bare simmer.
  3. Slowly pour the hot milk mixture into the bowl with the egg yolks, whisking constantly.
  4. Transfer the mixture back to the saucepan and cook over medium heat, stirring constantly, until it thickens to coat the back of a spoon.
  5. Pour the mixture through a fine-mesh sieve into a large bowl and let it cool, stirring occasionally.
  6. Add the beer, cream, and rum to the mixture, cover, and refrigerate overnight.
  7. In a heatproof mixer bowl, whisk sugar and egg whites over simmering water until smooth and warm.
  8. Remove from heat and beat with a mixer until stiff peaks form.
  9. Fold the egg white mixture into the eggnog.
  10. Pour into glasses, top with whipped cream, and sprinkle with chocolate shavings.
