Ingredients

  • 3 chunks fresh Pineapple (1" cubes)
  • 1-2 slices fresh Jalapeno
  • a tiny pinch Sea Salt
  • 2 oz. Tequila (silver or reposado)
  • 1 oz. Pineapple Juice
  • 1 oz. fresh Lime Juice
  • 1/2 oz. Triple Sec
  • 1/2 tsp. Agave Syrup
  • 1/2 tsp. Sugar
  • 1/4 tsp. Sea Salt
  • 1/8 tsp. Chili Powder
  • 1/8 tsp. freshly cracked Black Pepper

Instructions

  1. In a cocktail shaker, muddle the fresh pineapple chunks, jalapeno slices, and a tiny pinch of sea salt until the pineapple is broken down (about 20-30 seconds).
  2. Add tequila, pineapple juice, lime juice, triple sec, agave syrup, sugar, sea salt, chili powder, and black pepper to the shaker.
  3. Fill the shaker with ice, secure the lid, and shake vigorously for about 20 seconds.
  4. Combine the rim ingredients in a shallow bowl or on a small plate. Run a pineapple wedge or lime wedge over the rim of a glass, and dip it into the rim mix, shaking off any excess. Fill the glass with ice.
  5. Strain the margarita into the prepared glass and garnish with a fresh pineapple chunk and pineapple leaf.
