Ingredients

  • 2 tbsp butter
  • 1 tbsp soft brown sugar
  • 1 whole star anise
  • 1 cinnamon stick
  • 3 whole cloves
  • 2 cardamom pods
  • 6 organic black peppercorns
  • 2 oz rum
  • boiling water
  • ground cinnamon for garnish

Instructions

  1. Coarsely crush the spices and combine them with the butter and brown sugar in a small saucepan.
  2. Melt the mixture over low heat, stirring well until the sugar has dissolved.
  3. Let the mixture infuse for 2 minutes, then strain it through a sieve into a clean container.
  4. Once cooled, store the spiced butter in the fridge.
  5. In a mug, place 1 teaspoon of the cold spiced butter, 2 oz of rum, and top with boiling water.
  6. Add a sprinkle of ground cinnamon for an extra touch of indulgence.
