Smoldering Summer Bellinis
A refreshing and unique twist on the classic Bellini cocktail, featuring sweet, caramelized smoked nectarines and Prosecco with a hint of cinnamon.
Ingredients
- 2 ripe nectarines, peeled, halved, and pitted
- 1/2 cup sugar
- 1 bottle cold Prosecco
- Cinnamon sticks (optional)
Instructions
- Preheat the smoker to 275 degrees or prepare a charcoal or gas grill.
- Dip the nectarine halves in sugar and smoke or grill until caramelized.
- Puree 3 smoked nectarine halves in a food processor or blender.
- Cut the remaining half into thin wedges for garnishing the Bellinis.
- Add 2 tablespoons of puree to each champagne flute.
- Fill each flute with chilled Prosecco and gently stir with a cinnamon stick or bamboo skewer.
- Serve immediately.
