Ingredients

  • 2 ripe nectarines, peeled, halved, and pitted
  • 1/2 cup sugar
  • 1 bottle cold Prosecco
  • Cinnamon sticks (optional)

Instructions

  1. Preheat the smoker to 275 degrees or prepare a charcoal or gas grill.
  2. Dip the nectarine halves in sugar and smoke or grill until caramelized.
  3. Puree 3 smoked nectarine halves in a food processor or blender.
  4. Cut the remaining half into thin wedges for garnishing the Bellinis.
  5. Add 2 tablespoons of puree to each champagne flute.
  6. Fill each flute with chilled Prosecco and gently stir with a cinnamon stick or bamboo skewer.
  7. Serve immediately.
