Ingredients

  • 2 oz blended Scotch
  • 3/4 oz fresh-squeezed lemon juice
  • 3/4 oz honey ginger syrup (or honey syrup)
  • 3 slices fresh ginger
  • Ice
  • 1/4 oz Islay Scotch
  • Candied ginger
  • Lemon peel

Instructions

  1. In a cocktail shaker filled with ice, combine blended Scotch, fresh-squeezed lemon juice, and honey ginger syrup.
  2. Shake the mixture until well mixed and chilled.
  3. Strain the mixture into a rocks glass filled with ice.
  4. Slowly pour the Islay Scotch over the back of a spoon onto the cocktail to float it.
  5. Garnish with candied ginger and a lemon peel.
