Ingredients

  • 2 oz dark chocolate, 70%, chopped
  • 1 tbsp unsweetened cocoa powder
  • 1/2 tsp kosher salt
  • 1/3 cup heavy cream
  • 2 tbsp granulated sugar
  • 1 tbsp dark brown sugar
  • 3/4 cup milk
  • 1 oz mezcal
  • 1 oz Madeira wine
  • Whipped cream, for serving
  • Chocolate shavings, for serving

Instructions

  1. Prepare the hot fudge sauce by mixing dark chocolate, cocoa powder, and salt in a heat-proof bowl.
  2. In a saucepan, heat heavy cream, granulated sugar, and brown sugar until boiling, then pour over the chocolate mixture and whisk until smooth.
  3. In another saucepan, heat milk and a portion of the hot fudge sauce, then add mezcal and Madeira and stir.
  4. Pour the hot chocolate into a glass mug.
  5. Top with whipped cream and chocolate shavings. Serve immediately.
