Ingredients

  • 1 oz. white rum
  • 1/4 oz. Jamaican rum
  • 1/2 oz. genever
  • 1/2 oz. banana liqueur
  • 1 oz. tahini orgeat
  • 3/4 oz. fresh lime juice
  • Tahini Orgeat:
  • 0.50 oz. cognac
  • 0.50 oz. amaretto
  • 4 drops rose water
  • 3 oz. tahini

Instructions

  1. Steep the almonds in boiling hot water for 20 minutes, then blend thoroughly and strain.
  2. If resulting almond milk is less than 275ml, top with hot water until the volume is 275ml.
  3. Add white sugar, turbinado sugar, salt, cognac, amaretto, and rose water. Blend with tahini while the mixture is still hot.
  4. Store the Tahini Orgeat in a sealed container in the refrigerator for up to 2 weeks.
  5. In a shaker with ice, combine the white rum, Jamaican rum, genever, banana liqueur, tahini orgeat, and fresh lime juice.
  6. Shake well and pour into a glass, then top with pebble ice.
  7. Garnish as desired.
