Ingredients

  • 3 oz frozen unsweetened whole strawberries
  • 1 tbsp sugar
  • 1 tbsp honey
  • 1 tbsp water
  • 1 tsp finely shredded lemon peel
  • 1 tbsp lemon juice
  • 1/4 tsp whole pink peppercorns (optional)
  • 2-3 fresh sage leaves or 1/2 tsp dried sage, crushed
  • 1/2 cup ice cubes
  • 4.50 oz champagne or club soda, chilled
  • Fresh sage leaves and strawberries for garnish (optional)

Instructions

  1. In a saucepan, combine the frozen strawberries, sugar, honey, water, lemon peel, lemon juice, and peppercorns.
  2. Cook over medium heat until the mixture comes to a boil, stirring frequently, then remove from heat.
  3. Stir in the sage and let the mixture stand for 1 hour.
  4. Strain the mixture through a fine mesh sieve to create the syrup, discarding the solids.
  5. Refrigerate the syrup until ready to use, up to 3 days.
  6. To serve, combine the syrup and ice cubes in a glass, then slowly pour in the champagne or club soda.
  7. Garnish with fresh sage leaves and strawberries if desired. Enjoy!
