Ingredients
- 3 oz frozen unsweetened whole strawberries
- 1 tbsp sugar
- 1 tbsp honey
- 1 tbsp water
- 1 tsp finely shredded lemon peel
- 1 tbsp lemon juice
- 1/4 tsp whole pink peppercorns (optional)
- 2-3 fresh sage leaves or 1/2 tsp dried sage, crushed
- 1/2 cup ice cubes
- 4.50 oz champagne or club soda, chilled
- Fresh sage leaves and strawberries for garnish (optional)
Instructions
- In a saucepan, combine the frozen strawberries, sugar, honey, water, lemon peel, lemon juice, and peppercorns.
- Cook over medium heat until the mixture comes to a boil, stirring frequently, then remove from heat.
- Stir in the sage and let the mixture stand for 1 hour.
- Strain the mixture through a fine mesh sieve to create the syrup, discarding the solids.
- Refrigerate the syrup until ready to use, up to 3 days.
- To serve, combine the syrup and ice cubes in a glass, then slowly pour in the champagne or club soda.
- Garnish with fresh sage leaves and strawberries if desired. Enjoy!
