Ingredients

  • 1 sprig fresh rosemary
  • 1/2 tablespoon sugar
  • 2 tablespoons honey
  • 1/4 cup VSOP Cognac
  • 1/4 cup lemon juice

Instructions

  1. In a medium pot, bring 2 2/3 cups of water and 1 sprig of rosemary to a boil. Let it boil for 1 minute, then set aside to steep until the water cools to room temperature, which should take about 20 minutes. Remove the rosemary and pour the infused water into ice-cube trays and freeze.
  2. Put the sugar in a small, shallow dish. Use your finger to coat the rim of a tumbler with honey, then press the rim into the sugar to coat it. Set the glass aside.
  3. In a pitcher, mix the Cognac, lemon juice, and honey. Add the rosemary-infused ice cubes and stir vigorously until the honey dissolves, and the liquid is well chilled. Pour the mixture through a strainer into the prepared glass, discarding the ice. Garnish with a sprig of rosemary and serve immediately.
