Ingredients

  • 3/4 cup chopped rhubarb
  • 1/3 cup granulated sugar
  • 1 tablespoon water
  • 1/2 fluid ounce lime juice
  • Pinch of kosher salt (optional)
  • 2 tablespoons rhubarb syrup
  • 1 1/2 fluid ounces tequila
  • 1/2 fluid ounce ginger liqueur or orange liqueur

Instructions

  1. In a saucepan, combine the rhubarb, sugar, and water.
  2. Heat over medium-low heat until the sugar dissolves and the mixture simmers.
  3. Cook until the rhubarb breaks down into a jammy texture.
  4. Strain the mixture through a fine-mesh strainer, pressing the rhubarb to release the liquid.
  5. Allow the rhubarb syrup to cool to room temperature.
  6. Rim a cocktail glass with lime and dip in salt.
  7. Fill the glass with pebble or crushed ice.
  8. In a shaker, combine lime juice, rhubarb syrup, tequila, and ginger or orange liqueur with ice.
  9. Shake vigorously for at least 30 seconds.
  10. Strain the margarita into the prepared glass using a Hawthorne strainer.
