Ingredients
- 3/4 cup chopped rhubarb
- 1/3 cup granulated sugar
- 1 tablespoon water
- 1/2 fluid ounce lime juice
- Pinch of kosher salt (optional)
- 2 tablespoons rhubarb syrup
- 1 1/2 fluid ounces tequila
- 1/2 fluid ounce ginger liqueur or orange liqueur
Instructions
- In a saucepan, combine the rhubarb, sugar, and water.
- Heat over medium-low heat until the sugar dissolves and the mixture simmers.
- Cook until the rhubarb breaks down into a jammy texture.
- Strain the mixture through a fine-mesh strainer, pressing the rhubarb to release the liquid.
- Allow the rhubarb syrup to cool to room temperature.
- Rim a cocktail glass with lime and dip in salt.
- Fill the glass with pebble or crushed ice.
- In a shaker, combine lime juice, rhubarb syrup, tequila, and ginger or orange liqueur with ice.
- Shake vigorously for at least 30 seconds.
- Strain the margarita into the prepared glass using a Hawthorne strainer.
