Ingredients

  • 1.50 cups forced rhubarb (trimmed weight), washed and cut into 1/4-inch thick slices
  • 1/2 cup caster sugar
  • 2 cups dry gin
  • 1/2 vanilla pod, split in half
  • 4-5 slices fresh root ginger
  • 2 star anise
  • 1 blood orange, pared zest only

Instructions

  1. Place the rhubarb and caster sugar in a large, wide-necked clip lid jar, stirring well to coat the rhubarb in sugar.
  2. Add the vanilla, ginger, and star anise or orange zest, cover the jar, and set aside at room temperature for 12 hours or overnight, shaking the jar occasionally.
  3. After the sugar dissolves and draws out pink juice from the rhubarb, pour in the gin, stirring well to combine.
  4. Cover and set aside for at least 1 week, shaking the jar daily to draw out as much flavor from the rhubarb as possible.
  5. Strain the gin through a fine mesh sieve into a jug and decant into clean bottles.
  6. Serve over ice in tall glasses and top up with soda or tonic water and a slice of lime or blood orange.
