Ingredients

  • 1 oz. dry Oloroso sherry
  • 1 oz. Chivas Extra 13 Sherry Cask
  • 1/2 oz. fresh lemon juice
  • 1/2 oz. redcurrant syrup
  • Dash of soda water
  • Lemon peel, for garnish

Instructions

  1. Combine dry Oloroso sherry, Chivas Extra 13 Sherry Cask, fresh lemon juice, and redcurrant syrup in a glass, and gently stir.
  2. Fill the glass with ice all the way to the top.
  3. Add a dash of soda water and stir briefly for 2 seconds to blend the ingredients.
  4. Pour in a little more soda water, leaving the liquid 3cm below the top, and add one or two more ice cubes to tightly pack them.
  5. Garnish with a twist of lemon peel and serve.
