Raspberry Prosecco Fizz
A sophisticated raspberry gelée made with fresh raspberries, Prosecco, and a hint of lemon, offering a refreshing and fruity taste with a touch of effervescence.
Ingredients
- 1 cup fresh raspberries
- 2 1/2 tablespoons sugar, divided
- 1 teaspoon fresh lemon juice, divided
- 3 1/2 teaspoon unflavored gelatin (measured from two 1/4-ounce envelopes)
- 3/4 teaspoon orange-flower water (optional)
- 1/2 cup chilled Prosecco
Instructions
- In a bowl, combine raspberries, 2 tablespoons sugar, and 1/2 teaspoon lemon juice. Allow to sit until raspberries release their juices, about 20-30 minutes.
- In a separate bowl, sprinkle gelatin over 1/2 cup Prosecco and let it soften for 5 minutes.
- In a saucepan, bring 1 cup Prosecco to a boil with 2 tablespoons sugar, then remove from heat.
- Add the softened gelatin mixture to the saucepan and stir until dissolved.
- Transfer the gelatin mixture to a pitcher, then add the raspberries with juices, remaining Prosecco, 1/2 teaspoon lemon juice, and orange-flower water (if using). Ensure all sugar is dissolved.
- Using a slotted spoon, distribute the raspberries equally among glasses.
- Pour the Prosecco mixture equally into the glasses, about 3/4 cup per glass.
- Chill the gelée until firm, approximately 3 hours. It can be made up to 2 days ahead and kept chilled.
