Ingredients

  • 1 cup fresh raspberries
  • 2 1/2 tablespoons sugar, divided
  • 1 teaspoon fresh lemon juice, divided
  • 3 1/2 teaspoon unflavored gelatin (measured from two 1/4-ounce envelopes)
  • 3/4 teaspoon orange-flower water (optional)
  • 1/2 cup chilled Prosecco

Instructions

  1. In a bowl, combine raspberries, 2 tablespoons sugar, and 1/2 teaspoon lemon juice. Allow to sit until raspberries release their juices, about 20-30 minutes.
  2. In a separate bowl, sprinkle gelatin over 1/2 cup Prosecco and let it soften for 5 minutes.
  3. In a saucepan, bring 1 cup Prosecco to a boil with 2 tablespoons sugar, then remove from heat.
  4. Add the softened gelatin mixture to the saucepan and stir until dissolved.
  5. Transfer the gelatin mixture to a pitcher, then add the raspberries with juices, remaining Prosecco, 1/2 teaspoon lemon juice, and orange-flower water (if using). Ensure all sugar is dissolved.
  6. Using a slotted spoon, distribute the raspberries equally among glasses.
  7. Pour the Prosecco mixture equally into the glasses, about 3/4 cup per glass.
  8. Chill the gelée until firm, approximately 3 hours. It can be made up to 2 days ahead and kept chilled.
