Ingredients

  • 1 whole nutmeg pod
  • 1 tbsp allspice berries
  • 1 stick cinnamon, broken into pieces
  • 2 2/3 cups fresh orange juice
  • 2 2/3 cups pineapple juice
  • 3 cups red wine
  • 1 oz cognac, VSOP
  • 1 oz dark rum
  • 1/2 - 1 cup simple syrup (1:1 sugar:water), to taste

Instructions

  1. Place the nutmeg pod in a cloth and break it into pieces.
  2. Toast the nutmeg, allspice, and cinnamon in a large saucepan until aromatic.
  3. Add orange and pineapple juice, then bring the mixture to a boil.
  4. Simmer the mixture until reduced by one-third.
  5. Remove from heat, strain the liquid, and discard the spices.
  6. Add wine, cognac, and rum, and stir well.
  7. Gradually add the simple syrup to taste.
  8. Add orange slices, cover, and refrigerate to chill.
  9. Serve in a punch bowl with ice.
