Ingredients
- 1 whole nutmeg pod
- 1 tbsp allspice berries
- 1 stick cinnamon, broken into pieces
- 2 2/3 cups fresh orange juice
- 2 2/3 cups pineapple juice
- 3 cups red wine
- 1 oz cognac, VSOP
- 1 oz dark rum
- 1/2 - 1 cup simple syrup (1:1 sugar:water), to taste
Instructions
- Place the nutmeg pod in a cloth and break it into pieces.
- Toast the nutmeg, allspice, and cinnamon in a large saucepan until aromatic.
- Add orange and pineapple juice, then bring the mixture to a boil.
- Simmer the mixture until reduced by one-third.
- Remove from heat, strain the liquid, and discard the spices.
- Add wine, cognac, and rum, and stir well.
- Gradually add the simple syrup to taste.
- Add orange slices, cover, and refrigerate to chill.
- Serve in a punch bowl with ice.
