Ingredients

  • 6 large eggs
  • 1 lime peel
  • 6 (14 oz) cans condensed milk
  • 2 (12 oz) tins evaporated milk
  • 3-4 dashes Angostura bitters
  • 3 cups rum
  • 1/2 tsp freshly grated nutmeg
  • 1/2 tsp freshly grated cinnamon

Instructions

  1. Crack the eggs into a large mixing bowl, one at a time, and remove the white rubbery membrane from each egg.
  2. Add the peeled lime to the eggs, then whisk the eggs until frothy using an electric mixer on low or a handheld whisk.
  3. Slowly pour in the condensed milk while whisking vigorously, then add the evaporated milk and the entire bottle of rum.
  4. Add the freshly grated nutmeg and mix thoroughly, then discard the lime peel.
  5. Strain the mixture through a fine colander, then pour it into sterile glass bottles for storage.
