A refreshing and subtly sweet cocktail made with caramelized plum puree, gin, and a hint of lemon, topped with club soda and garnished with a sprig of lavender.
Ingredients
- 2 pounds fresh plums, halved and pitted
- 1/3 cup granulated sugar
- 2 ounces gin
- 1 large egg white
- 1 tablespoon fresh lemon juice
- Ice cubes
- 1/4 cup club soda
- 1 lavender sprig, for garnish
Instructions
- Preheat the oven to 400°F.
- Toss the halved and pitted plums with granulated sugar on a large rimmed baking sheet until fully coated, then spread them in a single layer.
- Roast the plums in the preheated oven until soft and juicy, stirring halfway through roasting time, approximately 10 minutes. Let them cool for 5 minutes.
- Place the roasted plums and any liquid on the baking sheet into a food processor or blender, then pulse until smooth.
- Pour the puree through a fine wire-mesh strainer into a medium bowl, pressing the puree using a rubber spatula. Refrigerate the puree until completely cool, about 20 minutes.
- Combine gin, egg white, lemon juice, and 3 1/2 tablespoons of plum puree in a dry cocktail shaker without ice.
- Shake vigorously to combine for about 15 seconds, then add enough ice to fill three-fourths of the shaker.
- Shake until well chilled, about 10 seconds.
- Strain the mixture into a chilled highball glass filled with ice, then top with club soda and garnish with a lavender sprig.
