Pisco Strawberry Fizz

There's nothing like a drink so tasty it has two countries arguing over it. Pisco, a grape-based spirit akin to brandy, is known as both the Peruvian and Chilean National drink. The grapes used to make it are typically grown in very dry areas, resulting in a lower volume of grapes but a higher concentration of flavor and aromas. Pisco can only legally be distilled once and distillers are not allowed to use water to regulate the spirits ABV, so they must distill it to proof. This cocktail combines the unique flavors of Pisco with the sweetness of strawberry and the effervescence of Prosecco, creating a delightful and refreshing drink.

Ingredients

  • 1 oz Pisco
  • 1 oz lemon juice
  • 1 oz strawberry puree
  • 1/4 oz Giffard vanilla
  • 1/4 oz simple syrup
  • 3/4 oz egg white
  • 1 oz Prosecco
  • Bitters, for garnish

Instructions

  1. Combine Pisco, lemon juice, strawberry puree, Giffard vanilla, simple syrup, and egg white in a shaker.
  2. Shake all ingredients except the Prosecco.
  3. Add Prosecco to a coupe glass.
  4. Pour the mixture on top of the Prosecco in the glass.
  5. Let the egg white foam settle.
  6. Spritz Ms Better Bitters Sumac and kiwi bitters on top using an atomizer and stencil.
