Ingredients

  • 3 oz pisco
  • 1 oz fresh-squeezed lime juice
  • 3/4 oz simple syrup
  • 1 fresh egg white
  • 1 dash Angostura or Amargo bitters

Instructions

  1. In a cocktail shaker, combine pisco, lime juice, simple syrup, and egg white without ice. Seal the shaker.
  2. Shake vigorously for about 10 seconds until the egg white becomes frothy.
  3. Add ice to the shaker and shake again very hard until well-chilled, about 10 seconds.
