Ingredients

  • 1/2 cup chopped pineapple
  • Juice of 1 lime and 1 orange
  • 1 tbsp finely grated ginger
  • 3/4 oz gin
  • To taste: ginger beer
  • To serve: lemon, lime, and orange slices and mint
  • 2 1/2 tbsp granulated sugar
  • 1/2 vanilla bean, split and seeds scraped
  • 1/4 cup firmly packed mint

Instructions

  1. In a saucepan, stir granulated sugar and 1/2 cup of water over medium-high heat until the sugar dissolves.
  2. Add the split vanilla bean and its seeds, bring to a boil, and cook until it forms a light syrup (1-2 minutes).
  3. Remove from heat, add the firmly packed mint, pour into a container, and refrigerate until chilled.
  4. Once chilled, strain the syrup (discard the mint and return the vanilla pod to the syrup) and refrigerate until required. This syrup can be stored for up to a month.
  5. Pulse the chopped pineapple in a food processor until finely chopped, then transfer to a jug.
  6. Add the lime and orange juices, grated ginger, and the prepared vanilla-mint syrup to the jug.
  7. Add the gin and plenty of ice, then stir to chill.
  8. Top up with ginger beer to taste and serve garnished with citrus slices and mint.
