Ingredients

  • 2 oz frozen peaches
  • 1 tablespoon sugar
  • 2 tablespoons water
  • 1/2 teaspoon fresh lemon juice
  • 4 oz chilled Prosecco or champagne

Instructions

  1. In a small pot, combine the frozen peaches, sugar, water, and fresh lemon juice.
  2. Bring the mixture to a boil and let it simmer for 5 minutes.
  3. Strain the syrup and store it in an airtight container for up to 30 days.
  4. Add the cooked peaches and 1/4 cup of peach syrup into a blender.
  5. Blend the mixture on high speed until it becomes a smooth puree.
  6. Pour the peach puree into a flute, filling it about a quarter of the way.
  7. Top it off with chilled Prosecco.
