Ingredients

  • Shredded coconut, for rimming
  • 1 lime wedge
  • 2 tbsp. coconut milk
  • 2 tbsp. pineapple juice
  • 1/4 cup frozen pineapple chunks
  • 2 oz. prosecco

Instructions

  1. On a plate, spread out the shredded coconut.
  2. Rim a champagne flute with a lime wedge, then dip it into the shredded coconut to coat the rim.
  3. In a blender, combine the coconut milk, pineapple juice, frozen pineapple chunks, and prosecco.
  4. Blend the mixture until smooth.
  5. Pour the blended mixture into the rimmed champagne flute.
  6. Repeat for a second serving.
