Ingredients
- Shredded coconut, for rimming
- 1 lime wedge
- 2 tbsp. coconut milk
- 2 tbsp. pineapple juice
- 1/4 cup frozen pineapple chunks
- 2 oz. prosecco
Instructions
- On a plate, spread out the shredded coconut.
- Rim a champagne flute with a lime wedge, then dip it into the shredded coconut to coat the rim.
- In a blender, combine the coconut milk, pineapple juice, frozen pineapple chunks, and prosecco.
- Blend the mixture until smooth.
- Pour the blended mixture into the rimmed champagne flute.
- Repeat for a second serving.
