Ingredients

  • 1/2 lemon
  • 1 teaspoon dark brown sugar
  • 1 teaspoon honey
  • Pinch of ground cinnamon
  • 1 clove
  • 1 1/2 oz. Madeira
  • 1 1/2 oz. London dry gin
  • Water, just off the boil
  • 1 stick cinnamon (optional)
  • Grated nutmeg

Instructions

  1. Juice half a lemon into a heatproof glass, using a strainer to remove the pulp and seeds.
  2. Add dark brown sugar and honey to the glass, then stir to dissolve.
  3. Sprinkle a pinch of ground cinnamon and add a clove to the glass.
  4. Pour water, which is just off the boil, into the glass, filling it three-quarters full.
  5. Stir the mixture well.
  6. Add the Madeira and London dry gin to the glass, then gently stir with a spoon or a cinnamon stick if preferred.
  7. Grate a little nutmeg on top and serve.
