Ingredients

  • 1 teaspoon caster sugar
  • 8 fresh mint leaves plus extra for serving
  • 1 small handful of raspberries
  • Ice cubes
  • 1.70 oz bourbon

Instructions

  1. In a small pan, make a simple sugar syrup by heating one part sugar with two parts water over medium-low heat until the sugar dissolves.
  2. Place 1 teaspoon of the sugar syrup in a tumbler.
  3. Add the fresh mint leaves and raspberries to the tumbler, and muddle them together.
  4. Allow the mixture to macerate for 10 minutes.
  5. Remove the mint leaves and strain the drink into a clean glass.
  6. Crush some ice and add a small handful to the glass.
  7. Pour the bourbon over the ice and stir well.
  8. Finish by adding more crushed ice and garnishing with fresh mint leaves.
