Ingredients

  • 1/4 cup sugar
  • 1/4 cup water
  • 4 sprigs mint leaves
  • 3 oz bourbon
  • 4 oz pomegranate juice
  • 2 oz seltzer water
  • 2 sprigs rosemary (for garnish)

Instructions

  1. In a small saucepan, create mint-infused simple syrup by combining sugar, water, and 4 mint sprigs. Heat until the sugar dissolves, about 2-3 minutes. Let it cool.
  2. In a cocktail shaker filled with ice, combine the mint simple syrup, bourbon, and pomegranate juice. Shake for 20-30 seconds.
  3. Pour the mixture over 2 rocks glasses filled with crushed ice.
  4. Top each glass off with a splash of seltzer water and garnish with a sprig of mint and rosemary.
