Ingredients

  • 2 slices cucumber (1/4-inch thick)
  • 2 slices fresh ginger (1/4-inch thick)
  • 6 mint leaves
  • 2 oz Pimm's No. 1 liqueur
  • 1 oz fresh Meyer lemon juice
  • 2 dashes Angostura bitters
  • 2 oz dry ginger beer
  • Garnishes: Cucumber spear or slice, mint sprig, rosemary sprig, strawberries, raspberries, blackberries, citrus wheels, candied ginger

Instructions

  1. In a cocktail shaker, muddle together the cucumber, ginger slices, and mint leaves.
  2. Add the Pimm's, fresh Meyer lemon juice, and Angostura bitters to the shaker.
  3. Fill the shaker with ice, cover, and shake vigorously for at least 15 seconds.
