Ingredients

  • 4 sprigs spearmint leaves
  • 2 tablespoons sugar
  • Juice of 4 limes
  • 1 1/2 shots white Bacardi rum
  • 1/2 cup ice cubes
  • 6 oz sparkling lime water

Instructions

  1. Remove the mint leaves from the stems and place them in a mortar and pestle with 2 tablespoons of sugar. Crush the leaves and sugar together until a smooth paste forms.
  2. Transfer the sugar mint paste into a glass.
  3. Squeeze the juice of 4 limes into the glass and add 1 1/2 shots of white rum. Stir well to combine.
  4. Add ice cubes to fill the glass halfway.
  5. Top off the drink with 6 oz (1/2 can) of sparkling lime water. Adjust the amount based on personal preference for fizziness. Enjoy!
