Ingredients

  • 1 1/2 ounces freshly-squeezed lime juice
  • 10-20 spearmint leaves (depending on size)
  • 2 ounces white rum
  • 3 ounces freshly-squeezed orange juice
  • 1/2 ounce simple syrup
  • 2 ounces brut champagne
  • Raw sugar for muddling
  • Ice
  • Spearmint sprig for garnish

Instructions

  1. In a cocktail shaker, combine the lime juice and mint leaves.
  2. Sprinkle raw sugar over the mixture and muddle the mint to release its oils.
  3. Add the white rum, orange juice, and simple syrup to the shaker.
  4. Fill the shaker with ice and shake until well-combined and thoroughly chilled.
  5. Strain the mixture into a highball glass filled about 3/4 of the way with ice.
  6. Top with champagne and garnish with a sprig of fresh mint.
  7. Serve immediately.
