Ingredients
- 1 1/2 ounces freshly-squeezed lime juice
- 10-20 spearmint leaves (depending on size)
- 2 ounces white rum
- 3 ounces freshly-squeezed orange juice
- 1/2 ounce simple syrup
- 2 ounces brut champagne
- Raw sugar for muddling
- Ice
- Spearmint sprig for garnish
Instructions
- In a cocktail shaker, combine the lime juice and mint leaves.
- Sprinkle raw sugar over the mixture and muddle the mint to release its oils.
- Add the white rum, orange juice, and simple syrup to the shaker.
- Fill the shaker with ice and shake until well-combined and thoroughly chilled.
- Strain the mixture into a highball glass filled about 3/4 of the way with ice.
- Top with champagne and garnish with a sprig of fresh mint.
- Serve immediately.
